- 1 cup (150g) diced tomato
- 2 tablespoons (10g) finely chopped cilantro
- 2 teaspoons (6g) diced red onion, plus more to taste
- 1 teaspoon (5ml) fresh lime juice, plus more to taste
- 1/8 teaspoon (0.75g) Celtic sea salt, plus more to taste
- Pinch of red pepper flakes
In a bowl, toss all of the ingredients until evenly combined. Add more onion, lime juice, and salt, to taste.
Serve immediately, or transfer to a sealed container in the fridge for up to 3 days.
YIELD: Makes about 1 cup (170g).
SERVING: 1 serving = 1/2 cup (85g).
