  • In a glass mason jar, add the apple cider vinegar, sweetener, and red pepper flakes. Secure the lid, and shake vigorously to combine well.
  • Add the cucumbers, secure the lid, and shake to combine. Leave on the counter top or place in the fridge for 30 minutes, shaking and turning upside down periodically for the flavors to mesh.
  • Consume immediately, or store in the fridge for up to 5 days.

YIELD: Makes about 1 cup (135g) quick-pickled cucumbers. 
SERVING: 1 serving = 1/4 cup (33.5g).
