Quick Pickled Red Cabbage

This quick pickled red cabbage provides a delicious sharp tangy note to salads, power bowls, tacos, wraps, and stir fries. If you're sensitive to sharp flavors, drain the liquid or pat dry before adding to dishes to avoid an overwhelming vinegar flavor. These quick pickles do not contain beneficial probiotics like fermented pickles, and will only keep in the fridge for about 5 days.

  • In a glass mason jar, add the apple cider vinegar, sweetener, and smoked paprika. Secure the lid, and shake vigorously to combine well.
  • Add the cabbage, secure the lid, and shake to combine. Leave on the counter top or place in the fridge for 30 minutes, shaking and turning upside down periodically for the flavors to mesh.
  • Consume immediately, or store in the fridge for up to 5 days.

YIELD: Makes about 1 cup (125g) quick-pickled red cabbage.
SERVING: 1 serving = 1/4 cup (31g).
