Pico De Gallo
- 1 cup (150 g) diced tomato
- 2 tablespoons (10 g) finely chopped cilantro
- 2 teaspoons (6 g) diced red onion, plus more to taste
- 1 teaspoon (5 ml) fresh lime juice, plus more to taste
- 1/8 teaspoon (1 g) Celtic sea salt, plus more to taste
- Pinch of red pepper flakes
Makes 1 cup (240g), and for the purposes of this program, it is broken into 2 servings.
You will use this Pico De Gallo in the Righteous Raw Tacos and the Taco Salad. This pico is also a fantastic snack with the Almond Crackers or Vegan Crackers, on the SK60™ Bread, with veggie sticks, or tossed in non starchy salads.
